Thai-Style Omelette - @waybeyondpadthai's Three-Ingredient Recipe

MyTurn - What is it?

Before I get to the omelette, let me tell you about MyTurn.
Oftentimes, we see a post about a recipe or a project that catches our attention. We think about making it and sometimes even leave a comment that we would try to make it. But then we get busy or maybe we forget about it. However, there are those occasions when we do make it. This is MyTurn. It’s when you get your turn to recreate it; put your own spin on the recipe or the project. It's a great way of acknowledging the original creator's work or a way to show how someone has inspired you.
Let's show our appreciation for original content creators by using the #myturn tag.

Back to the Thai-Style Omelette

This recipe is based on @waybeyondpadthai's entry for Week #2 of the Cook with Us contest. The theme was three-ingredient recipes. Check our her entry and more importantly, watch her really entertaining video here.
If you haven't heard of Cook with Us, it's a contest hosted by yours truly @offoodandart, @chefsteve and @pandamama. It's a fun way to learn and engage with fellow foodie Steemians. Going back to @waybeyondpadthai's omelette, the three main ingredients are eggs, chicken and basil.

The seasonings used for the recipe are fish sauce and oyster sauce. They are considered free ingredients and therefore do not count towards the three ingredients. I added chili oil to give the omelette a little kick.

I decided to use my mini pans to make smaller portions of the omelette.

Ladle the omelette mixture into the pan(s).

This one shows the edges starting to brown and almost ready to be flipped over. I wanted it crispy just as @waybeyondpadthai made hers so I let it sit for a while.

Flip the omelette over when one side is brown and crispy. Cook the other side. Look at that nice crust!

Serve with steamed rice.

Yeah, so easy. Parang torta natin na may giniling na baboy.

Oh my Anna, how many of these did you make at once? I've never made more than one omelette at a time. They look amazing

I had 6 for the first batch. That was crazy because they needed to be flipped about the same time
Then I made more. 😜

How many people did you have for breakfast?

There were 5 ... definitely more omelettes than people =)! But they were good the next day too!
