Instructions:

Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set the rice aside.
In a large pan or Dutch oven, heat the ghee or vegetable oil over medium heat. Add the sliced onions and sauté until golden brown.
Add the ginger-garlic paste and cook for a minute until fragrant.
Add the chicken pieces and cook until they are browned on all sides.
Add the chopped tomatoes, biryani masala powder, turmeric powder, red chili powder, and salt. Mix well and cook for 5 minutes until the tomatoes are soft and the spices are well combined.
Lower the heat and add the plain yogurt to the pan. Stir gently to coat the chicken with the yogurt and spices. Cook for another 5 minutes.
In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained basmati rice to the boiling water. Cook the rice until it is 70-80% done (parboiled). Drain the rice and set aside.
Preheat the oven to 180°C (350°F).
Layer half of the parboiled rice over the chicken in the pan. Sprinkle half of the garam masala powder, mint leaves, and coriander leaves on top of the rice.
Add the remaining rice as the next layer and sprinkle the rest of the garam masala powder, mint leaves, and coriander leaves.
Cover the pan tightly with aluminum foil or a tight-fitting lid to seal in the steam.
Place the pan in the preheated oven and bake for about 30-40 minutes until the rice is fully cooked and aromatic.
Remove the pan from the oven and let it sit for 5 minutes.
Gently fluff the rice with a fork, mixing the layers together.
Serve the chicken biryani hot with raita (yogurt sauce) or salad.
