GIZDODO
Ever heard of Gizdodo before?. Gizdodo is a simple side dish that is served with rice. It is basically prepared with gizzards and ripe plantain (dodo). Thus,the name gizdodo.
INGREDIENTS:
3 big sized ripe plantain
Gizzard (500g)
4 big tomatoes
6 red peppers
1 large onion
4 green peppers
2 seasoning cubes
Vegetable oil
PREPARATION:
- Peel off the back of the ripe plantain and chop them into smaller bits.
- Slice the tomatoes, peppers and onions.
- Wash the gizzards with hot water and pre cook for 10 minutes.
- Use one seasoning cube,half teaspoon of salt and half of the sliced onions.
- Check to see if the gizzards are soft, then chop into smaller bits.
- Fry the plantain with vegetable oil until it turns golden brown.
- Next fry the gizzards until it turns dark brown.
- Reduce your oil, add the remaining half onion,stir,and add the tomatoes, add the sliced pepper and allow to fry for 10 minutes. Remember to stir occasionally to avoid getting burnt.
- When the sauce is properly fried, add one cube of seasoning and salt to taste.
- Transfer the gizzards,plantain and sliced green pepper. Stir and allow to simmer for 3 minutes.
