Algerian food: DOUARA ... part1
Douara is the stomach of the lamb. The process of cleaning and preparing it is so long and tiring. It needs to be perfectly spicy. It is basically cooked during wedding parties and special events.
Some prefer cooking rice inside it (rice balls).
