BERRY ICE CREAM BARS 🍓🍪 // healthy vegan summer dessert

In need of a refreshing summer dessert to cool you off? These berry ice cream bars are going to do the job!

They are made of crumbly chocolate base and fruity berry cream. The combination of both creates a great balance of sweetness and the perfect texture.

Main ingredient and source of flavour in the base are raisins. I would usually go for dates in desserts like this one but decided to switch things up this time. I feel like there is a misunderstanding in the world of raw desserts, especially if you are not so familiar with them. Most raw dessert recipes call for dates but in most cases any dry fruit will work. I rarely see a recipe where there is used another dry fruit and not dates.

I first used rice cakes in a recipe a few weeks ago now and absolutely fell in love with it! Honestly, I’ve never seen a recipe that calls for rice cakes before and I don’t know why this is not a thing because it’s amazing! I love the special taste it gives and the best thing is the texture! It gives super fluffy texture that oats don’t. The only thing you should keep in mind is to use unsalted ones otherwise it will unbalance the flavours.

We all know I love having nicecream for breakfast so why not use it in a dessert as well? It’s the most perfect naturally-sweetened cream you will ever get. The only thing is that you have to let the bars thaw for about 5 minutes before eating so the nicecream gets soft and easy to eat.

I stepped outside of my comfort zone for this one and decided to film a video of the process of making it. I’ve been wanting to move into the whole ‘tube’ world for the looooongest time now. It’s a huge passion of mine and I finally encouraged myself to give it a try. I know it’s not the best but I think it’s pretty decent for my first ever video. BERRY ICE CREAM BARS 🍓🍪


| INGREDIENTS

BASE

  • 1 cup soaked raisins
  • 1 cup oats
  • 5 rice cakes, unsalted
  • 2 tbsp cacao powder

CREAM

  • 2 frozen bananas
  • 1 cup frozen berries

| METHOD

1/ In a food processor add soaked raisins, oats, rice cakes and cacao powder. Blend until you get sticky dough.

2/ Transfer to a pan lined with parchment paper and press down so you get an even layer.

3/ In a food processor add melted frozen bananas and berries and blend until you get smooth and creamy cream.

4/ Transfer on top of the base and even out with a spatula.

5/ Put in the freezer for 3+ hours to set.

6/ Once the time is over, take out and cut into bars. Store in the freezer for up to a month. Let thaw for about 5 minutes before eating.
