Pork baked in an oven with garlic, covered with apricot jam. The
original recipe for the holiday. Instead of jam you can use honey.
Pork is perfectly combined with a fruity sweetish taste: dried
apricots, prunes, apples. If there is a desire, you can stuff a piece
of pork with dried fruits.
1 kg of pork (tenderloin)
3 tablespoons mayonnaise
6 cloves of garlic
1 tbsp. mustard
salt pepper
1 tsp Provence herbs
3-4 tablespoons apricot jam
Pork rinse, dry with a paper towel. To rub with salt and pepper and
garlic. Mix mayonnaise and mustard. Cover with pork, cover and
refrigerate for 30 minutes.
Turn the piece of pork into foil or put it into a roasting sleeve and
put it in the preheated to 180 ° C, the oven for about 1 hour. Then
open the foil, grease the pork with apricot jam and cook for another
20-30 minutes without foil, so that the top is baked.
