Ok, I need to comment as someone who cooks Fried Rice almost everyday lol.....
I use a half a tablespoon of light soy sauce and one teaspoon of fish sauce to add a little saltiness and half a teaspoon of sugar..(Thais love salt and sweet!)
I start by sweating off half a chopped onion and 3 cloves of finely chopped garlic and half a decent sized carrot, diced up.
Let them have a couple of minutes alone in one tablespoon of oil before adding the rice, let the rice cook for a couple of minutes before adding the fish sauce, stir it in, the light soy, stir it in and then the sugar.

Glad to see, that like me, you add the lightly whisked egg last. Most Thais cook it first and then put it to one side before adding it in at the end.

Finally add the egg and the spring onions (scallions).

Final note, I cook up a big batch of rice and then stick it in the fridge and use it all week.

Same same, but different as we say in Thiland lol ;-)

LOVE your beef, I will try that with the Worcestershire sauce and lemon juice!
