FOOD: Egusi Soup | Naija Gist
This is one of the most consumed meal in Nigeria, it’s comsumed mainly in the south-east, south-south and the south-west of Nigeria, also some parts of the north of the country.
Egusi (Dried Melon Seed), which is the main ingredient of the meal is rich with fat and protein, the meal also contain a lot of vegetables, like pumpkin leaf, tomato and really nice species. The meal is what everybody who visits Nigeria, should try.
Egusi soup can be eaten with pounded yam, eba, wheat meal, rice, e.t.c
Ingredients:
• 4½ cups (600g) Egusi (Melon) seeds
• 2 cooking spoons red palm oil
• Beef: Best cut and Shaki (cow tripe)
• Fish: Dry Fish and Stock Fish
• 3 tablespoons ground crayfish
• Pepper and Salt (to taste)
• Vegetable: Nigerian pumpkin leaves, spinach or bitter leaves
• 3 small stock cubes
• 1 Ogiri Okpei (traditional locust bean seasoning: optional)
