Chicken á la Myranda
In the Netherlands we say: 'Chicken, the most versatile piece of meat'.
Ingredients
2 good chicken fillets
1 half zucchini
2 tomatoes
1 onion
2 teaspoons of olive oil
Herbs to taste
2 tablespoons of grated cheese
Preparations:
- Preheat the oven to 180 degrees
- Cut the tomatoes, onions and zucchini into thin slices and halve them.
-Marinade the chicken (10 minutes)
Marinade:
Mix 2 tablespoons of oil with herbs as desired. I use chili powder, paprika powder, salt and pepper.
This is how you make it:
- Make 4 to 5 notches on the top of the marinated chicken.
- 'Fill' the chicken with zucchini, onion and tomato slices
- Sprinkle the chicken with grated cheese
- Put the chicken fillet in a greased oven dish
- Bake for 20 minutes in the preheated oven
Also super handy to prepare in the evening for the next day. You just have to slide it into the oven.
