Material :
- 6 fresh mackerel fish
- 1/2 lemon, thinly sliced

Toppings:
- 1 red tomato, split, remove the seeds, cut into squares
- 5 red chilies, thinly sliced crosswise
- 4 green tomatoes, roughly chopped
- 10 red onions, chopped
- 10 pieces of red cayenne pepper, bruised
- 10 pieces of green cayenne pepper, bruised
- 2 tbsp fish sauce
- 2 tbsp tamarind water
- 1 tsp salt
- 1 tsp mushroom stock
- 1/2 tsp pepper powder

How to Make Steamed Puffy Fish with Chili Seasoning:
1. Remove the entrails and gills of mackerel. Wash and drain until no blood remains.
2. Arrange the mackerel on a plate or heatproof container.
3. Garnish the perimeter with lemon wedges.
4. Toppings: mix tomatoes, red chilies, cayenne pepper, shallots, green tomatoes in a bowl.
5. Add fish sauce, tamarind water, salt, mushroom broth and pepper. Stir until well blended and absorbed.
6. Pour over the mackerel in a plate.
7. Steam in a hot steamer for 30 minutes until cooked.
8. Remove and serve warm.
