Jack Fruit (Polos) Curry Recipe

Jack Fruit named in sinhalese "Polos" is a famous food around Sri Lanka. Jack Fruit is a seasonal fruit and it is used as a fruit as well as a vegetable. Ripe jack fruits are so delicious hence used as fruits and tender jack fruits are used as vegetable. Among tender jack fruits, the small ones are used to make Polos Curry while large ones are steamed and eaten with 'coconut sambol'. Whatever form it is, jack fruits are so delicious. My Sri Lankan Recipe I'll share my own recipe for making Jack Fruit curry later. It's much easier than this recipe.

Ingredients:-

Tender Jackfruit 1
Coconut cream 150ml
Turmeric powder ½ TSP
Chilli powder 1 ½ TBS
Roasted curry powder 1 TBS
Pepper 1 TSP
Mustard seeds 1 TSP
Ginger 1 TSP
Garlic 1 TSP
Onion (M) 2 (Sliced)
Green chili 2 (Sliced)
Curry leaves 4 Sprigs
Pandan leaf 2
Salt 1 ½ TSP or to taste
*Goraka 1 Piece
*Soak the goraka in warm water for 20 minutes and make a thick paste.

To dry roast:-

Fresh grated coconut 3 TBS
Fennel seeds 1 ½ TSP
Cumin seeds 1 ½ TSP

The Recipe:

  • Clean and cut the tender jack fruit into 3 inches long pieces like rectangle.
  • Add enough water with little salt and pressure cooker the jack fruit up to 2 whistles.
  • Dry roast the fresh coconut, cumin seeds and fennel seeds until golden brown and grind it into powder. Set aside.
  • Soak the goraka in warm water for 20 minutes and make a thick paste.
  • Grind the ginger, garlic and pepper into fine paste. Set aside.
  • Heat the oil in a wok and add mustard seeds to splutter.
  • Add sliced onion and sauté until translucent.
  • Add curry leaves, pandan leaf, sliced green chilies along with ground ginger, garlic and pepper paste. Sauté for 1 minute.
  • Add turmeric, chili, and roasted curry powders.
  • Add boiled jack fruit (with water) and mix with the spices along with goraka paste. Adjust the salt.
  • Cook for 5 minutes.
  • Add coconut milk, stir and cook on a low flame for 15-20 minutes.
  • Lastly add roasted coconut mixture and stir gently.
  • Serve hot with white rice or yellow rice.

Yes it really is. However not anyone can make this food deliciously. There's more you should know to make this one good than the recipe.
