Powdered Dry Pap...... Amazing recipe.
Powdered pap popularly known as Akamu is locally made from millet or corn. It's a Nigerian recipe which I call local custard because it has a similar appearance and method of preparation to a custard.
Prior to this time pap has been in wet form since it's soaked in water before and after grinding and then extracted. This makes preservation hectic as one has to filter and replace the water daily to prevent spoilage. Another from of preservation is storing it in the refrigerator which is unreliable due to the epileptic power situation in the country.
A new, better and easier method of preparation and preservation has emerged. This method is faster and more effective. Its in a dry and powdered form.
Here is the procedure on how to make powdered pap.
Buy Millet or white/yellow corn it depends on what you like to use.
Buy dry ginger. You can get it from the local market.
Eliminate stones and dirts.
Sun your millet or corn. Ensure it's properly dried.
Take it to the Mill (The millet or corn and ginger) and grind with a dry engine.
After grinding, sieve the blended mixture into a bowl with either a tiny pored sieve or a white cloth in order to separate the chaff.
After sieving you have your filtered dry pap in the bowl and the chaff in the sieve or cloth.
Store your dry powdered pap in an airtight container.
And then your pap is ready for use anytime, any day.
The ginger is not compulsory, it just adds nutrient to your pap and gives it an awesome flavour. Also, you can use both the millet and corn. This is very nutritious and tasty. Other items you can blend with it are guinea corn, soya beans etc.
N/B: Be careful with the ginger don't add too much to avoid being pepperish.
