Japan Food (Teriyaki chicken with miso)
Give your seared chicken a complex savory taste with this miso teriyaki chicken recipe. Miso is a fermented dough made from soy beans that can also contain rice and / or barley. The taste of miso depends on the ingredients used and the duration of fermentation. This recipe uses a liquid miso made from rice and soy beans (for a full-bodied, velvety miso) infused with dashi broth for a touch of extra umami. Try this recipe and you will see that miso brings something special.
Ingredients
- 200g boneless chicken legs, with skin
- 8 boiled green beans
- 2 càs of liquid miso with dashi
- 2 cs of water
- 1 tbsp of vegetable oil
- salt and pepper
Preparation
- Remove the excess fat from the chicken legs. Add salt and pepper.
- In a skillet, heat the vegetable oil over medium heat. Put the chicken in the skillet (skin side down) and cook for 3-4 minutes, until the skin is golden brown. Turn the pieces over and cook another 5-6 minutes, until the chicken is golden brown.
- In a bowl, mix the liquid miso with 2 tbsp of water. Spread this mixture on the thighs. Add the boiled green beans and simmer 2-3 minutes, until the sauce thickens.
- Remove the pan from the heat. Cut the chicken into medium slices. Serve chicken and green beans on a plate, and accompany with rice for a delicious full meal.
