Spaghetti a la Carbonara
Today I'll be making some Carbonara and I'll be sharing it with you guys!
The recipe is taken from Chef John from foodwishes.com. He is very good in my opinion. Any recipe from him will turn out great. So without further a due, the list of ingredients that we'll be needing:
Ingredients for 2 portions:
- 6-8 oz dry spaghetti (or any pasta)
- 1 tablespoon olive oil
- 4 oz pancetta, guanciale, or in a pinch, a mildly smoked bacon
- 4 eggs
- about 3/4 cup grated Italian cheese (a half Pecorino Romano and half Parmigiano-Reggiano blend is perfect)
and of course mix in a lot of ground black pepper!
Preperation:
- grate the cheese and put it in a big bowl
- crack 2 eggs and take 2 egg yolks and mix it together with the cheese
- add a generous amount of freshly ground black pepper
- put about 8 cups of water to a boil and salt it!
- once it's boiling add the spaghetti
- keep stirring so it won't stick together!
- take about 2 cups of the pasta water
- cut the bacon into small pieces
- cook with olive oil ( don't crisp up too much) and freshly ground black pepper
- after about 4 minutes add the pasta water in with the bacon
- check for the pasta to be al dente and drain
- once drained add the pasta in with the bacon
- add the eggs and cheese mix
- keep stirring so the eggs won't cook solid
- add extra cheese if necessary
