Baked Halloumi cheese with caramelized onion in rice paper

Products for 4 servings:

  • 200g Halloumi cheese
  • 4 pcs of rice paper
  • 4 large onions
  • 4 tablespoons olive oil
  • 1 cl garlic
  • 2 tablespoons coconut sugar
  • 2 tablespoons balsamic vinegar
  • pinch of salt
  • 2 tablespoons raisins
  • 50-100g of walnuts
  • balsamic reduction and pink pepper for decoration

Method of preparation:

First prepare the caramelized onion. Skin and chop the onion into thin slices. In a deep pan or non-stick pot, warm the olive oil and add the chopped onion. Cook on a strong fire and stir often until the water disappears. Then, cover with a lid and reduce the fire. Cook for another 15-20 minutes, stirring from time to time until the onion changes its color to amber. Add the coconut sugar and stir until it becomes even more caramelized. Add balsamic vinegar, walnuts and raisins. Season with salt and chopped garlic. Stir for another 5 minutes until the strong vinegar’s aroma evaporates.

Cut the Halloumi cheese into four slices. Wet the first rice paper and put it on a plate. Place a piece of Halloumi cheese in the middle and cover with 1-2 tablespoons of caramelized onions. Close the rice paper, folding the four edges to the middle. Fold the other rice papers in the same way. Bake on a dry pan, baking first from the side where there is only one layer of rice paper, then using spatula, turn and roast from the other side.

Serve with few drops of Balsamic reduction and sprinkle some pink pepper.
