Empanadas!!

So @positivebalances and I made empanadas the other day and they came out absolutely amazing. It wasn't your typical way of making them because we just used what we had in the fridge basically. We took pizza dough and rolled it out really thin and cut circles out of the dough. Then we made our fillings for the empanadas, the kinds we made were
1.) Spinach and Mushroom
2.) Spinach Mushroom and Feta
3.) Tater Tots and cheddar
4.) Cheddar
5.) Mango- Desert Empanada (frozen mango chunks and a dash of sugar mixed together)
After stuffing them, we poked down BOTH sides of the empanada with a fork to seal it, then we brushed them with an egg wash, and poked some holes in the top with a fork. We set them to bake at 375 degrees for about 25-30 minuets, until they were golden brown, then let them cool for about 10 minuets before we devoured them.
The picture on the bottom is the Mango empanada.
