Grilled Stuffed Eggplant with Shrimp
Summer is not over yet, include this eggplant recipe to end your summer BBQ party. Having fun outdoor with friends, along with delicious food is really precious. Make your day endless with this recipe.
My own original recipe.
Prep Time: 15 minutes / Cook Time 15 minutes
Ingredients:
1 big eggplant
10 jumbo shrimps
2 tbsp olive oil
1/2 tbsp chopped fennel seed
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
Some salt
Method:
Cut the eggplant one inch thick and empty the middle with a spoon or small knife then sprinkle with some salt. Peel and clean the shrimp then marinate with ground black pepper, fennel seed, garlic powder, paprika, olive oil and pinch of salt.
Bend and stuff the shrimp into the eggplant and grill it until golden. Serve.
