Cook With Us 22: 5 min recipes - Egg in a Hole & Choc Mint Cake
Time is not always on our side, so often runs away with us, but it's time to eat as those little tummy gremlins are screaming for food and takeout is not always the best option.
Many of us are familiar with Toad in a hole - sausages baked in a batter, but that will certainly take longer than 5 minutes.
Next best thing would be Egg in a Hole.
- I used a healthy Honey & Oats bread
- Cut a circle with a cookie cutter
- Into a pan it went with a dollop of butter in the centre
- Egg broken into the centre
- Topped with diced Tomatoes, Ham & grated Cheese
- Popped under grill to melt the cheese & we're all done in just under 5 minutes.
Oozing with goodness.
Now that breakfast was sorted in a jiffy, teatime was looming and I was dying for a piece of chocolate cake. There was no time to turn the old oven on so how about a Chocolate Mint Cake in a Mug which is thrown together in another jiffy and only takes 2 minutes in the microwave!
Choc Mint Cake in a Mug
- 4 tablespoons Self Raising Flour
- 4 tablespoons Castor Sugar
- Pinch Salt
- 2 tablespoons Cocoa Powder
- 1 Egg
- 3 tablespoons Oil
- 3 tablespoons Milk
- 1/2 teaspoon Vanilla Essence
- 100 gram Mint Chocolate
Place dry ingredients in your largest coffee mug, stir with fork
Add wet ingredients & mix well with fork
Place half the choc squares into centre of batter
Bake in microwave on high for 2 min
Leave to rest for a minutes before loosening sides & turning out
Grate remaining choc on top
Note my mug was not big enough, perhaps I should have placed it into 2 regular sized coffee mugs.

So glad you enjoyed it, that minty chocolate really made it, definitely adding that again! They must not overcook it though, 2 min did the trick. If yhe microwave is a lower wattage one could cook it another 30 seconds but no more, the standing time is important as well.

That egg-in-a-hole looks delicious - and quite colourful! I'd leave out the ham and maybe substitute mushrooms instead. And the cake in a mug! What a great idea.
I've made egg in a hole before, but not with all that deliciousness on the other side! 😋
