Biscuit cake with protein cream
Hello! Today I will prepare my favorite pastry "Korzinki".
Dough:
100 g Sugar
1 piece Egg
200 gr Oil of sinks
0.5 tbsp Mayonnaise
0.5 tsp Soda with lemon juice
2 tbs Flour (380-400 g)
Protein Cream:
2 tbs Sugar (360gr)
6 pcs Egg whites
0.5 tsp Citric acid
Let's start with the test!
In a bowl, spread 200 grams of soft butter, add 100 grams of sugar, 1 egg, a half tablespoon of mayonnaise.
In a separate plate, pour half a teaspoon of soda and quench the lemon juice or vinegar, mix well and add to a bowl, mix well with a whisk or a mixer until smooth.
Sift 2 cups of flour, I took 380-400 grams. We knead the dough, we should have a soft dough and do not stick to our hands.
Lay out the form and stretch the entire shape of a thin layer, so do with all the pieces. We send it to the preheated oven to 180 degrees and bake for 12-15 minutes.
5 minutes after you put it in the oven, take out and press the bottom with a glass and bake on. Finished baskets get out and let them cool down completely.
In a bowl, pour out 360 grams of sugar, add 100 milliliters of water and send to a large fire, stir well, bring to a boil.
After the boil, we reduce the fire and cook until the syrup begins to slowly languish.
While the syrup is boiled, whisk 6 proteins to a lush steady peak.
The syrup is already languishing, add half a teaspoon of citric acid, stir well and turn off the syrup.

Since the mold I use is 9 centimeters wide, we divide it into 17 equal pieces, take one piece and make a cake from it.
The cake is ready, it turns out very tasty, very light and airy, so try to cook, it is prepared quickly and there is nothing complicated.
