Farm Fresh Seasonal Meals~ Vegetarian Quiche
We came across a local farm up the street from our home and got some fresh eggs so I just had to make them a main meal for the gang! We went down to our garden patch and picked as much as we could and got to the mixing bowls. I always attempt to feed our family with seasonal foods and this summer has been abundant with choices!
To make our quiche you'll need;
6 fresh eggs
1 portabella mushroom, chopped
1/2 zucchini, shredded
1/4 onion, chopped
1/2 bunch of broccoli, tops only~ chopped
1/2 red pepper, chopped
1/4 cup feta
1/2 cup shaved parmesan
a handful of fresh basil
a few tablespoons of olive oil for the pan
sea salt & black pepper to taste
In a large skillet saute your onions in a bit of olive oil until they're golden
add the rest of your veggies for a few minutes (not cooking them thoroughly as they'll bake with your egg mixture in a few moments)
turn off the heat and set aside
In a medium sized mixing bowl crack & mix your eggs~ if they're super fresh you'll notice their dark orange yolks just glowing with nutrients from the hens grazing on fresh summer herbs and clovers
add your cheeses, salt and pepper and quickly mix again
mix in veggies from the pan, blend well and pour into your crust
top with an extra bit of shaved parm pieces and cracked pepper
bake for about 25 minutes ~or until it doesn't quiver in the middle
allow to cool for 20 minutes to set
We had this with some chilled papaya from our yard and topped it off w/ fresh basil. This is great served chilled as well for an easy lunch.
