Have You Tried Oatmeal Muffins Yet?

They are okay! :)




Muffins and cupcakes are one of the most favorite desserts out there, they're easy to make, they are tasty and you can play around with the batter and the appearance to really shape your dream food!

Although it all sounds super fun, I don't think I've ever been into them in a way pretty much everyone I know is. I guess I've only made them about 10 times in my entire life and about 70% of that time I was trying a few different recipes to see how I can modify them.

Anyway, today I am going to make oatmeal muffins, I've never had them before, kinda curious how they're going to turn out. The recipe is very simple too, so anyone could make them. One more thing! I didn't have any eggs, so I'm skipping them too.

Ingredients:

  • 100 g flour;
  • ~ 80 g rolled oats;
  • 1 tb. spoon rolled oats;
  • half a teaspoon vanilla extract;
  • 150-200 ml milk;
  • 2 teaspoons butter;
  • 1-2 teaspoons baking powder;
  • sugar to taste.

Directions:

The first thing you wanna do is to grind your rolled oats, I did this in a blender, you can use a food processor or maybe you already have some oatmeal flour, then perfect - use that! Mix the ground oatmeal with sifted flour, add in the reserved oats, baking powder, sugar and mix them all together.

In a separate bowl, combine milk, vanilla extract and melted butter. Add the wet ingredients to the dry ingredients and stir until combined.

Preheat your oven to 180C or 350F, pour the batter into the muffin tin and bake for about 20-25 minutes.



So while we are waiting on our muffins to get done baking, let's make the chocolate topping, here is what we are going to need:

  • 4 teaspoons unsweetened cocoa;
  • 1-2 teaspoons sugar (or according to your sweet tooth level);
  • 8 teaspoons milk;
  • 1 teaspoon butter.

Directions:

Mix cocoa and sugar together, add in the milk. On a low heat start stiring it together until the mixture starts boiling up, turn off the heat, let it slightly cool down, mix in butter. Done!

I happened to have some almond slices which I will be using for topping as well, feel free to skip the nuts or use whatever you like.

So once the muffins are baked, let them cool down, decorate with the chocolate syrup and toppings of your choice.
I thought these muffins tasted warm better, but the cold ones were fine too. This recipe only makes a small batch of them, I had 8 muffins.

Aw! Thank you! You should give them a shot if you're into oatmeal, they were alright. I'm just not a muffin person myself, but I like cooking different things.

I guess it is a good number for a high seed blender, I am not familiar with the grade, my blender is pretty powerful too unlike my food processor haha I like using it for grinding grains and nuts

HS blending for your health is the real deal, plus all the other stuff it can be used for.

It is a Waring commercial grade.

VitaMix is one you can find easily, Costco even now, the last few years, they are good, just not as powerful, but man, they have been around for like 100 years!!!

The one we have is called Ninja and it's pretty powerful. Thank you for the recommendation, whenever it stop working I will look into the VitaMix ones. I've never been to Costco before too haha

Beautiful guide. I've done oatmeal muffins with peanutbutter instead of butter and with chocolate chips. Covered with mint and strawberry puree.
