The spread of European cuisine in Korea began relatively late, already in our century. Western culinary traditions until 1945 penetrated Korea almost exclusively through Japan, so at first the Koreans got acquainted not with European cuisine itself, but with its Japanese version.
This variant, in turn, goes back mainly to the German culinary tradition, but differs quite a bit from the original. It should be noted, however, that the Russians, and first of all the Sontag sisters, played a role in the spread of European dishes among Koreans, one of whom was the wife of the Russian envoy K. Weber. They were the ones in 1895-1896. more than once the Korean king was treated to Russian dishes. Subsequently, the same Mrs. Sontag opened the first restaurant of European (more precisely, French) cuisine in Seoul: which operated at the hotel she owned.
After 1945, American traditions also began to exert a great influence on Korea, however, under the concept of "Western cuisine," most Koreans mean primarily Japanese-Koreanized German cuisine, the dishes of which are offered in numerous European restaurants.
