Sweet Fire Cookies

Not long ago, I was visiting a friend of mine and she made these awesome cookies in a shape resembling fire. I liked them so much that I asked her for a recipe. I was waiting for my wrist to heal so that I can finally make anything in the kitchen and since it finally did, I am able to share this recipe with you. 

I used two types of filling: cranberry preserves that I made in the autumn and apple jam that I made on the spot. The cookies turned out great. They were crunchy, apple filling was sweet and cranberry one was sour. All that made a perfect combination.

Ingredients (makes about 40) 

  • 500 g (1.1 lbs) of flour 
  • 200 g (0.44 lbs) of butter 
  • 120 g (0.26 lbs) of sugar 
  • 2 eggs 
  • 100 mL (3.4 oz.) of milk 
  • 2 tsp of baking powder 
  • 1 tsp of vanilla sugar 

Filling: 

Fruit jam,  apple jam:

  • Apples 
  • 3 tbsp of sugar – depends on how sweet your apples are you might need less or more 
  • Cinnamon
  • 1 tbsp lemon juice 
  • 2 tbsp of water 

1. Sift flour with baking powder. Then add butter sugar, eggs, vanilla sugar and milk and combine everything together. When all ingredients make a uniform dough, wrap it in a plastic wrap and place it in the fridge for 1 hour.  

2. Make the apple filling. Peel and grate the apples. Then add them to the pot with sugar, cinnamon, water and lemon juice to a pot. Bring everything to boiling and simmer till majority of fluids is evaporated. Leave to cool down a bit. 

3. Divide the dough into parts and work each one of them with a rolling pan to a 2-3 mm (1 inch) thickness. (dough that is not being used can be placed back in the fridge. Now, cut the flatten dough into 12 cm wide strips and then divide each strip into triangles. Make 4 cuts in each triangle parallel to the edges. 

4. Add a spoon of a jam in the middle and fold left end and then right end. Place the cookie on the baking pan lined with baking paper and bake in preheated oven for 15 minutes at 175oC (350 F). When ready cool them on a cooling rack and serve.
