The story of Songkran Festival and My Coconut Sticky Rice with Mango Part 2// Recipe

It's officially Songkran festival! Very hot during the day, perfect temperature for a water battle. If you're afraid of getting wet you've got to stay in or going around in a car instead of motorbike.IMG_20180413_153436_645.jpg

It was a fun day. The little market at the temple in my village was very lovely. It was not a very successful day of selling but it was very nice to join them.

I woke up around 6 am (it's not very early at all, people wake up latest around 5 am here) and made my sticky rice with mango.

Ingredients:
1.5 kg of sticky rice
500 ml of coconut milk
2 and half cup of sugar
1 tsp salt
4 tbs carrot juice
4 tbs pandant juice
2 tbs beet root juice
6 medium size mango

Instructions:

Soak the sticky rice in the water for 2-3 hrs or overnight before cooking.

Atfer that rinse the sticky rice with a running clean water.

On medium heat. Add water about 1/3 of steaming pot. Preheat the water, bring it to boil.

Line 4 soup spoons in the top part of the steamer. This is a little trick to help the sticky rice cooks properly.

Line the white Straining cloth or Filter Cloth on top of the spoons. Add the sticky rice grains. Cook for 10 minutes.

Put the cooked sticky rice in a trey. Stir it around 1-2 minutes to release the heat. Devide it in to 4 portions.

Heat up coconutmilk, add sugar and salt. Stir until sugar and salt dissolved.

I made the sticky rice into different colours. Devide the coconut milk mixture in 4 bowls.
Bowl 1 mix in pandant juice for Green.
Bowl 2 mix in carrot juice for organge.
Bowl 3 mix in beet root juice for pink.
Bowl 4 just coconut milk mixture for white.

Put the sticky rice in the bowls. Leave it soak for 30 minutes.

Then we have a colourful colour of sticky rice. Serve with the ripe mango. Perfect for a hot summer day :).
