Lamian Master Finished Making Hand-Pulled Noodles in 2 minutes! 蘭州拉麵
Lanzhou Lamian is a particular kind of noodles in China. All food in the restaurant is produced in the halal standard. As this was my first time at a Lanzhou Lamian Restaurant, I order the two most basic but famous dishes: Lanzhou Lamian (Hand-pulled Noodles) 拉麵 and Dao Xiao Mian (knife-cut noodles) 刀削麵.
Lamian is hand-pulled once an order is made. Lamian Master was very skilful and could hand-pulled noodles from scratch within two minutes.
Dao Xiao Mian is a type of noodles that is also known as knife-cut/shaved/peeled noodles. Noodles are cut directly from the dough with an unique flat knife into a large pot before it’s boiled .
The noodle has a chewer texture. You can see the noodle is thicker in the middle while thinner on the sides, as the light can not go through the middle but sides.
