Dinner Recipe: Hearty Elk & Potato
I made this dish and thought all of you might like to know how to make it. The main dish is elk and potatoes. You could substitute the elk with many other types of meat including moose, beef, caribou, sheep etc.
Necessary ingredients: Caribou, sliced potatoes, vegetable stock, garlic, black pepper, sea salt, onion, onion powder, gravy (Your choice of flavor. I used peppered white gravy), chopped chives, parsley, and butter. I'm not going to give exact amounts on spices as I never measure them myself.
Preparation:
(Preheat oven to *350 degrees)
Cut up the potatoes. Don't dice too small as they cook too fast. After slicing place the potatoes and roast in the bottom of the pan. Leave enough room to place the roast in the middle. You may want to place the roast in first. Next, you are going to want to layer on your various spices, butter, onion, garlic, and sliced tomatoes. Last but not least pour in your vegetable stock (submerge the roast about 1/3 of the way up) making sure to rinse down some of the spices from the top into the bottom with the stock. Wrap foil around the pan and poke two holes in the top for some ventilation. Place into the oven at 350 for an hour and 30 minutes.
As for the gravy, I use the vegetable stock that comes out from the pan at the end. Mix that with a gravy packet and you have a fantastic tasting gravy and you are not wasting any vegetable stock.
