Swedish colorful fika
Let me tell you a story about a phenomenon called fika.
Although fika is synonymous for Swedes taking time out for a coffee, it is also more than that. If you’re with an old friend, it’s a chance to catch up. If you’re with someone new, it’s a chance to get to know each other.
Accompanying sweets are crucial. Cinnamon buns, cakes, cookies, even open-faced sandwiches pass as acceptable fika fare. It comes as no surprise that Swedes are among the top consumers of coffee and sweets in the world – or that Swedes appreciate the good things in life. And how does a Croatian girl integrate into Swedish society? By making delicious home made cakes for family and friends!
This time - a perfect summer dessert! Sour cream vanilla berry cake, topped with raspberry mousse and frozen fruit!
This cake is almost entirely oven baked, and after it sits in the fridge overnight, it is ready to be decorated! As simple as that!
