A second course of tasty meat with a delicious filling: the chicken roll with mortadella, pistachios and raisins. A tasty recipe with a tasty filling, ideal for a lunch or dinner with family or friends. Nice to see and good to eat, it's all to try!

• 500 g (1 lb ) of chicken breast
• 200 g (7 oz ) of mortadella
• 60 g ( 2½ ) of Parmigiano Reggiano
• 30 g (1½ ) of raisins
• 40 g (1½ ) of shelled pistachios
• 100 g (4 oz ) of lard in thin slices
• 8 slices of bread in a box
• 2 dl (1 tsp )of milk
• extra virgin olive oil
• salt
• black pepper

For a second of meat that everyone likes, the chicken roll with mortadella, pistachios and raisins is an original idea ... but certainly not light! This dish is made very soft by slices of lard that are wrapped around the meat.

This recipe is particularly substantial: inside, in fact, we find a stuffing of minced mortadella accompanied by pistachios and raisins, two ingredients that combine well as taste.

You can serve this crunchy and tender dish with baked potatoes or if you prefer with vegetables, a perfect side dish to balance the richest meat seconds.

Soak the raisins in warm water. In a bowl arrange the slices of bread with the crust, cover with milk and after 10 minutes drain and squeeze.

Chop the chicken breast with 2/3 of the soaked bread, salt and pepper.

Mince the mortadella with the parmesan and the remaining bread, add the squeezed raisins and the coarsely chopped pistachios, stir and give the mixture the shape of a sausage.

Over a rectangle of transparent film spread the chicken dough 2 cm thick, in the center lay the mortadella sausage.

With the help of the film, form a compact and regular roll. Bardatelo with the slices of lard, wrap it first in a sheet of baking paper and then in an aluminum one. In a pan pour 2 glasses of water, lay the roll, place in preheated oven at 200 degrees (400 F)for 40 minutes.

Open the bag and cook the uncovered roll for 10 minutes, then turn it over and cook for another 10 minutes until crunchy. Withdraw, cut into slices and serve.
