MY LUNCH #5 Spinach Alfredo Pasta! DIY
INGREDIENTS
225g fresh spinach leaves, washed and sliced (you can buy them prepared in bag or frozen)
25g butter
15g flour
250ml milk
2 tbs grated parmesan cheese
1 pinch nutmeg
salt and pepper
PREPARATION
Spinach is boiled in very little water for 5 minutes. Drain and reserve 2 tablespoons of the broth that has formed during cooking.
Put the butter in a saucepan over moderate heat and when it is melted add the flour. Stir over low heat for one minute and then slowly add the milk, stirring all the time. The fire is raised and when it is boiled it is lowered to a minimum for 2 minutes.
To the sauce the two spoonfuls of broth of the spinach, the parmesan cheese and the nutmeg are thrown to him. Stir well until cheese is melted.
Crush the spinach in the blender to make a puree. Throw this spinach puree in the sauce and stir everything. Add salt and pepper to taste.
It is served with any type of pasta and with some grated Parmesan cheese
