Perfect African jollof rice (benachin)
How to make the perfect jollof rice, also known as red rice or benachin.
Ingredients needed.
100g tomato puree.
1 tin 400g chopped tomatoes.
3 medium sized onions.
1kg of meat ( beef, chicken,lamb or goat best).
2 table spoon garlic paste.
2 maggi cubes.
400ml of cooking oil.
500g rice (broken basmati best).
Pinch of black pepper.
Pinch of salt.
Pinch of hot chilli (to taste).
1 cabbage.
7 carrots.
1 large pan.
How to prepare.
Cut meat in chuncks and stir fry for 5min with all cooking oil, then add 1ltr water and leave to boil until water is all gone at that point the the oil will come out. Blend the onions and add to the oil and meat along with the garlic paste, chopped tomatoes, tomato puree, black pepper, salt, chilli, maggi cubes and the vegetables which should be peeled and cabbage cut into quarters and slowly stir on a medium heat for at least 20min.
Add 500ml water to the mix then leave to simmer for 30min. After 30min feel vegetables to check if done, if not leave for extra time until done. Once vegetables are done remove and place to one side.
Add the rice to the mix and stir then cover with good lid (to trap steam) and leave on high heat for 15min or until rice has absorbed all the water, turn mixture over inside pot, then reduce heat to low and cover pot and leave for another 20min, after open the pot and check rice is cooked, if not recover and leave for bit longer. Once rice is cooked it's ready to serve.
