Baking #1: CINNAMON SCROLLS

Currently in Australia its winter. That therefore means time to eat warm, gooey delicious comfort foods. What better way to spend a Sunday morning than to bake cinnamon scrolls?!

I usually would make these scrolls with cream cheese frosting but forgot to buy some this morning. I therefore substituted the cream cheese with thickened cream+ vanilla….. holy guacamole it tastes delightful. I probably over-estimated the amount of icing you need but it worked a treat having some extra to drizzle over the pieces I wanted to eat (oh and to eat spoonfuls of this alone).

This recipe is soooooo simple and will leave your house smelling like a bakery. What are you waiting for……time to start baking!!!!

What you need…..

Dough
• ½ cup unsalted butter, melted
• 2 cups milk, warmed
• ½ cup granulated sugar
• 1 pack active dry yeast
• 4 cups flour, divided
• 1 teaspoon baking powder
• 2 teaspoons salt

Filling
• 1/2 cup butter, softened
• ¾ cup light brown sugar
• 2 tablespoons ground cinnamon

Frosting
• 1 cup thickened cream
• 1 teaspoon vanilla extract
• 1 cup powdered sugar

How to make……

  1. Generously butter (or conola spray) selected cake pans/foil trays.
  2. In a large bowl, whisk together warm milk, melted butter, and granulated sugar.
  3. Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  4. Add 4 cups of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  5. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  6. Preheat oven to 350˚F/180˚C.
  7. After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  8. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  9. Roll the dough out into a large rectangle.
  10. Spread the softened butter evenly over the dough.
  11. Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon. Press the mixture into the butter.
  12. Roll the dough, forming a log, and pinch the seam closed. Place seam-side down. Cut into bite-sized pieces (using a sharp knife).
  13. Form into tray. Cover and allow to rise for an additional 30 minutes.
  14. Bake the cinnamon rolls in a preheated oven for 25–30 minutes, until golden brown.
  15. While the cinnamon rolls are baking, prepare the frosting. In a medium-size mixing bowl, whisk together cream, icing sugar and vanilla until smooth.
  16. Remove the cinnamon scrolls from the oven. While still warm, drizzle (or douse) frosting over the scrolls.

So delicious! In Germany it's summer, but who cares, I will try it now!

I think cinnamon scrolls really are a year round thing. It's just extra nice to be baking in the winter when the hot oven helps heat the house
