Green Chile Short-Rib Panini -

Green Chile's are a staple of Colorado cuisine. They put them on everything out there. From the popular Green Chili Stew, to a topping over a breakfast burrito, Green Chile is AMAZING stuff. At the 7th Street Deli in Walsenburg, Colorado they added this southwest pepper gem to a tender short-rib sandwich. It was an great combo. It was all held together with cheddar cheese and griddled on rye bread to perfection.

Walsenburg, Colorado is a tiny pass-through town on the way to The Great Sand Dunes National Park. If you are taking the 4+ hour trek from Denver, this will be the last bit of civilization before the park. It is well worth a pit-stop before you spend your day in the mountain desert.

Hey, @jeffjagoe! This looks so good, my mouth is watering looking at the grilled perfection. Rye bread is great, I'm a big cheddar cheese fan, and is the green chilli somewhat spicy? One day when I come to Colorado, I will have a taste! :)

yes the green chili has a great spice, it's not overpowering but it still leaves your mouth nice and tingly.

Damn, my mouth is just watering away! Haha! The green chilli, despite never trying it, sounds a lot like jalapeño, but I'm guessing it's a completely different chilli. I love that warm spicy feeling in the mouth, wishing we had grilled sandwiches like these in London!
