MOZZARELLA AND COURGETTE TART
You will need:
340-90g puff pastry (mine was homemade)
1 medium courgette,
1 medium leek,
1 sweet pepper,
4tbsp olive oil,
75g mozzarella,
1 lemon zest,
Half lemon juice,
2tbsp chopped parsley,
2 garlic gloves.
Chop up your vegetables and fry them in 1tbsp of oil, till they are golden brown, leave to cool slightly as you don't want to melt your pastry!
Roll out 3/4 of your pastry into a 30x20 rectangle, use the rest of the pastry and cut into 4 equal peices, roll them out into a long rectangle, doesn't matter if there thin! Use some water and stick them to the big rectangle,
Sprinkle the fried vegetables over the top of your pastry and then slice your mozzarella then later over the top, drizzle with the olive oil and place into the oven pre heated at 180'c.
Grate your garlic and place into a jug, zest the Lemon and juice half of it pouring it into the jug, 15 minutes after the tart is in the oven take it out and sprinkle your mixture over the top place back in the oven fora other 2 minutes till mozzarella is golden, serve hot with rice, mash or salad.
