Daily Dish! BBQ chicken Quesadillas

Hi steemine! Hope you are doing well? Are you looking for easy and quick dinner? Then try BBQ chicken Quesadillas Cheesy, tangy, and so satisfying.

BBQ chicken Quesadillas hit all the right notes and are best for a weekend lunch or a quick weeknight dinner. they're certain to delight out-of-city guests or your little ones.

you could prepare dinner your personal hen breast the use of the delicious marinade below, or simply use precooked grilled hen breasts or leftover rotisserie hen. It could not be any less complicated.

you can also make these quesadillas open faced little pizzas too! It tastes so similar to California Pizza Kitchen's classic BBQ chicken pizza. So if you're a fan of their i am sure you may enjoy my version as well.

What you should need.

2 complete chicken breasts (or approximately 1 half of cups of shredded rotisserie chicken)
1 lime (juiced)
1 teaspoon seasoned salt
1 teaspoon pepper
1 tablespoon olive oil
8 flour tortillas (fajita-sized)
1 half cups Mexican-style cheese (shredded)
1 small red onion (sliced thinly)
1/four to 1/2 cup barbecue sauce (your preference, plus extra for serving)
Garnish: cilantro leaves
2 tablespoons sour cream (for serving)

How to prepare BBQ chicken Quesadillas

1: Split each chicken breast so you have 4 halves. place the chicken breasts in a big bowl.

2: Whisk collectively the lime juice, seasoned salt, pepper, and olive oil. Pour it over the chicken. cover the chicken and let marinade for as a minimum 20 mins or up to two hours within the fridge. any further will purpose the lime juice to "cook" the chicken (i.e. ceviche) so do not let it marinade for too long!

3: Heat up your grill or grill pan to medium-high heat, so that you gets best grill marks. Grill the chicken for approximately 5 minutes on each side or till cooked through. Take it from the heat and allow to rest for approximately 5 mins. Then slice into narrow strips.

4: Toss the strips with the barbecue sauce in a medium-sized bowl.

5: Heat up a cast iron skillet or griddle to medium-low heat. Quesadillas can burn without difficulty, so monitor the temperature intently. place a tortilla at the pan, pinnacle with about 1/4 of the cheese, some of the red onion and approximately 1/4 of the chook. place another tortilla on pinnacle. cowl with a lid to help allow the cheese to soften.

6: Flip the quesadilla and finish cooking for a minute or two on the other aspect. Repeat with the relaxation of the quesadillas. you could maintain them heat in a 200 F oven even as you're cooking the rest of the quesadillas.

7: Reduce every quesadillas into quarters. Garnish with cilantro leaves, greater barbeque sauce, and sour cream,
