Cravings
Cravings are weird. Some days sweet, some days salty, and some days spicy. Yesterday I was craving fajitas. So I searched around for a decent recipe and for something low in calories.
Found it.
Quick and easy and little to no prep time. 252 calories. Here goes!
Chicken and Rice Fajitas in foil
Ingredients:
1 cup Minute Rice
1 cup warm water
4 boneless, skinless chicken breasts
Salt and pepper
1 Red, Green, and Orange bell pepper
1 onion
1 tbsp Extra Virgin Olive Oil
1/4 cup mozzarella cheese
Lime juice
Directions:
Preheat oven to 400 degrees
Spray tin foil with cooking spray (I used olive oil)
Combine rice and water into a small bowl. (I made just a small portion for me so used half a cup for both)and add 1 tbsp of fajita mix.
Using a slotted spoon, divide the rice mixture evenly over tin foil.
Season chicken with salt and pepper, rub fajita mix on as well.
Place chicken over rice.
Place peppers and onions on the sides of the chicken. Drizzle with olive oil.
Divide cheese mixture over chicken.
Fold the sides of the foil over the chicken, covering it completely. Seal it closed. Place it on a baking sheet.
Bake 30-33 minutes or until temperature of chicken reaches 165F.
Remove from oven. Open foils and place under broiler for an additional few minutes.
Remove again and add lime juice over the top.
You can also garnish with sour cream, cilantro, and avacado! Enjoy!
