Chorizo Fried Rice
It's Sunday everyone! Do you have any plan to spend your Sunday outside or just stay home? I've been wanting to go to the forest to see the beautiful color of autumn but it is forecast to rain in the afternoon on the week end. So we'll do it when the weather looks promising as we dont want to get wet, especially we want to bring our new camera. I mostly use the camera for food photography but now we want to capture some moments outside which we rarely do.
Since I am stuck at home, my partner and I were collaborating in the kitchen to cook a dish for our lunch! There's only chorizo left in our fridge so we decided to make Chorizo Fried Rice, it's very easy to make yet delicious.
Chorizo Fried Rice
Ingredients
- 1 tbsp olive oil
- 1 clove garlic, finely chopped
- 1 small onion, thinly sliced
- 200 gr mixed mushrooms, cut into chunks
- 2 spring onion, chopped. Save some of the green part for sprinkle.
- 3 cups cooled cooked rice
- 1 pack chorizo, cut into chunks
- salt and pepper to taste
- 2 red chilies (optional), chopped
- lemon for garnish
Directions
- In a wok, heat the oil and stir fry the garlic for a minute aver medium heat.
- Add in onion and mushrooms, cook until soft.
- Add in spring onions and rice. Mix until well combined.
- Season with salt and pepper then add in the chorizo. Mix until well combined and the rice has a nice color from chorizo.
- Serve and sprinkle with spring onion and chili. Garnish with a slice of lemon.
We had our lunch in front of television while watching our favorite tv series. It's just perfect! :-D Actually, we rarely have our meal in the dining room except when we have guests, hehe..

Wow! I love fried rice, i made it last time was very delicious, i prepared it with chicken and shrimp 🍤, it's Asian dish, sound yummy.
Yes, the Asian version with chicken and shrimp is delicious as well. I like it when it's spicy :-D

Yes I had an assignment I had to finish on Monday, but gladly it didn't took me so long to finish :) Haha yes that are a lot of tv series. Haven't heard from those tv series yet, so I will be checking them out :D. A friend of my also said that Narcos was a good show, but haven't watched it yet.

Great idea using chorizo! Yum
This was our second time making fried rice with chorizo. The first time we made it, it's just to get rid of chorizo in the fridge and it's a good discovery! Now we're fan :-D
