Mushroom Rice Energy

The past week I have been so ravenous yet having no appetite. I experienced weakness from not eating and then when I couldn't bear the hunger anymore, I'd get take out and that would be it for the day. My food intake went from being already low to dangerously low. This had gone on for a little over a week. However, I knew I couldn't go on forever like this; I noticed it taking a dramatic toll on my mental health!

That's when I realized that I can no longer mope over the fact that I can no longer eat the foods I once enjoyed. Sure, there are some favorites I may have to let go of and that I possibly may not ever find a suitable replacement ( sighs pizza), however; there are so many other foods and new favorites to discover (my positive thinking for the day, ha)!

So, with that pep talk in mind, I remembered that I had mushrooms and cabbage that I didn't want to go to waste. Then I thought mushroom rice! Thankfully, there were a few boxes of rice pilaf in the pantry. Score!

Leftover mushroom pilaf from last night is even better the next day.

I used portobello mushrooms here, but in the future will use white mushrooms

I really liked the lighting

Here's a less attractive picture from last night's "last minute" dinner with fried cabbage. Quite gratifying to finally throw something together that makes me go "Mmmm". It's been sooo long!
