Raw Vegan Blueberry Cheesecake

Recently I've received this delicious present from my humans!!! This colorful, breathtaking and mouthwatering raw vegan cheesecake!!

I was given a half of it and split it with my best friend sheep. I tried to look like a Unicorn on this picture, but it turned out more like a rhinoceros.. I should of place a raspberry a bit higher on my nose.. Oink! 🐽

The spiritual-Unicorn message from my heart was "Believe in yourself and everything is possible". So grateful and in love with life! Oink! 🐽🐽🐽

I also found a recipe of this heavenly tasty blueberry cheesecake and want to share it!!

RAW VEGAN BLUEBERRY CHEESECAKE

CRUST

  • 1 cup of Brazil nuts
  • 1/2 cup of Almonds
  • 1/2 cup of shredded coconut
  • 2 tablespoons of cacao powder
  • 2 teaspoons of vanilla extract
  • 4 medjool dates
  • 2 teaspoon of raw coconut syrup or agave nectar
  • pinch of salt

Process well in a blender or food processor until crumbly. Press into a bottom of springform plate or a pie plate.

FILLING

  • 4 cups fresh or frozen blueberries
  • 2 cup cashews
  • 3/4 cup of melted coconut oil
  • 4 tablespoons of melted cocoa butter
  • 1/2 cup of honey or coconut syrup
  • 2 tablespoons lemon juice
  • 1/4 tablespoon salt

Process in a powerful blender, pour over the crust and chill or freeze until ready to serve.

Decorate with berries or raw vegan sauce of your choice.. and ENJOY!! 🐽🐽🐽
