Final flavors of summer
As much as I'm looking forward to the holiday season fast approaching, we are still enjoying some simple summer salads. After all, the temperatures here are still climbing into the mid, to upper 80's during the day. This heirloom tomato, cucumber, and feta salad is so simple and satisfying.
Serves 2 people
Ingredients
- 2 heirloom tomato's, 2 different colors if possible
- 1 Persian cucumber
- 10-15 kalamata olives cut in halves
- 1/8 of a red onion, shaved very thinly
- 8 large basil leaves, chiffonade
- 2oz feta cheese, large chunks
- 1/2 fresh lemon
- 2 Tbs olive oil
- Coarse ground sea salt
- Fresh ground black pepper
Cut the tomatoes into wedges, slice the cucumber into large chunks, halve the olives, and shave the red onion into very thin slices. lay all the vegetables on a plate, add the feta cheese chunks and basil on top, squeeze some of the lemon over everything and drizzle with the olive oil, finish with salt and fresh ground pepper.
