Fall is in the air
With the temperatures cooling down I couldn't control my desire to cook my husband a hearty dinner with roasted vegetables and a beautiful pan seared, prime, flat iron steak. This makes for an easy meal that will satisfy almost anyone.
Pick your favorite vegetables and clean, slice and or dice them. Toss the vegetables in olive oil, grape-seed oil or coconut oil and season with salt and pepper. Spread the vegetables out onto a baking sheet and roast in a pre-heated oven at 375 degrees F until they are slightly caramelized and tender, approximately 45 minuts. for the steak I picked a prime flat Iron as it has great marbling, very flavorful and fairly inexpensive compared to the more popular ribeye and Strip steaks. Season the steak with salt and fresh ground pepper and use a cast iron pan to sear the steak. Make sure the pan is nice and hot, add about a tablespoon of olive oil or vegetable oil and lay the seasoned steak in the hot pan. Sear on medium to high heat for 3-4 minutes per side. Once you flip the steak over in the pan add a Tablespoon of butter, 1 clove of crushed garlic and baste the steak by spooning the melted butter over the top as it finishes cooking. Remove the steak from the pan and set on a clean plate and allow the steak to rest for about 4-5 minutes before serving
