Chili Sauce From My Mom's Cooking 生活有百味,香辣好滋味----妈妈做的辣椒酱

Do you like chili sauce? I have always loved it since I've been a child. And it has been widely used in my kitchen, such as eating dumplings as a condiment sauce, serving with noodles, frying seafood and cold dishes, it is essential.
Of cause, it is benefit for your body. (Prevent cancer, will increase your appetite for food and help indigestion, lower fat etc. )
So a few days ago, I returned from my hometown with several bottles of chili sauce made by my mom,( I really love eating meals cooked by my mom) it is very delicious and I can't wait to share with you guys.
There are many methods for making chili sauce, my mom's method is very easy to do. First, wash chili and dry it, use a food processor to beat it and then peel the garlic and mince it. Heat a frying pan, add chili , bean paste, sugar, white vinegar, salt to the pan and cook it for about 5 min. you'd better to stir it constantly in the cooking process in order to avoid burn. And then turn off the heat. Add garlic to the pan and mix well. Cool it and pour it into many bottles. it is done.
You can change the proportion of chili and garlic according to your favorite. Now this is the season for the chili pepper, and It's a good time to make chili sauce, so here I can highly recommend it to you.
每年秋天妈妈都会做好多酱菜。有香味十足的辣椒酱,清新的韭菜花酱以及爽脆的白萝卜等等。这些我从小到大都十分喜欢。而辣椒酱我家用的也比较多,无论是作为饺子蘸料,还是搭配面条,凉拌小菜,辣炒海鲜,都是美食必不可少的调味品。
当然吃辣椒酱岂止是开胃般那样简单,好处可是很多的,比如:
- 解热镇痛。辣椒辛温,能够通过发汗而降低体温,并缓解肌肉疼痛,因此具有较强的解热镇痛作用。
2.预防癌变。辣椒的有效成分辣椒素是一种抗氧化物质,它可阻止有关细胞的新陈代谢,从而终止细胞组织的癌变过程,降低癌症细胞的发生率。
3.增加食欲,帮助消化。辣椒强烈的香辣味能刺激唾液和胃液的分泌,增加食欲,促进肠道蠕动,帮助你消化。
4.降脂减肥。辣椒所含的辣椒素,能够促进脂肪的新陈代谢,防止体内脂肪积存,有利于降脂减肥, 爱美的你一定不要错过哦。
所以这次回家,妈妈特意做了很多,取新鲜食材,精心制作,真正的好滋味。每餐都不忘来两勺,最后我连吃再拿的又带回好几瓶。。其实每个家庭都有自己独特的美食秘籍,看似原材料相同,但是做出来都有自己独特的风味。好多私房菜就是这么一代代传下来的吧。
说到回家吃饭,妈妈总是做一大桌子菜给我们吃。桌上荤素搭配,凉拌小炒样样齐全。我喜欢吃她做的蚝油煎豆腐,蒜香蚕蛹,油焖茄子,虽然菜式简单,就是些家常菜,但吃起来有滋有味。她做菜也麻利迅速,通常饭菜做好了,所用锅碗瓢盆也都洗好摆放原位,厨房还跟没做饭的时候一样。
我们做了三种口味,有特辣和微辣的无油辣椒酱,还有一种是香辣牛肉酱,里面还放了一些熟花生碎和白芝麻。就是下面这瓶,我觉得都不用作其他调味,直接拌饭吃就很美味了!
蒜和辣椒,盐和糖 的比例根据自己的口味酌情增减。
下面给大家分享的是无油版的蒜蓉辣椒酱:
1、新鲜的小红辣椒(怕辣的可以多用一些红柿子椒,我是两者都用了)洗净去蒂,晾干水分(一定要彻底晾干哦),切几段然后用搅拌机绞碎。切的时候最好戴上手套哦,要不会很辣很辣的!
2、蒜去皮,切碎。
3、炒锅中放入搅碎的辣椒,豆瓣酱,糖,米醋,盐,一起煮沸,开锅后转小火继续煮约5分钟,要边煮边搅,以免糊锅。待水份蒸发的差不多后,关火,然后辣椒酱温热的时候,放入蒜末、拌匀。
4、冷却后装入干净的无油无水的瓶中。
密封,放冰箱冷藏可保存数日。
制作辣椒酱的方法很多,喜欢这种熬制过后的辣椒酱因为少了水分而更容易保存。
现在正是辣椒上市的季节,自制的无添加剂,好吃又健康。原来生活就像这辣椒酱,如此简单。

Even though pepperish food do tend to make me have a running stomach, I must confess your chilli sauce makes the risk of having stomach troubles later worth the effort. Yummy
