🍪Raw, Vegan Chocolate Covered Cookie Dough Bites! (Gluten-free!)🍪
Is there such a thing as cookie dough that's good for you? I think this counts!
(The final photo thing wasn't working out because I couldn't stop eating them. Yes, those are bites haha) ;))
One thing that really grinds my gears ;) is not being able to have chocolate chip cookie dough anymore (the eggs, the flour, the butter and the white, processed sugars- yikes!)
Everytime I see a cookie for sale, it always is missing one of my requirements. Maybe it's gluten free, but still has eggs or maybe it's vegan but not gluten free. I thought, this is a nightmare! We HAVE to solve this!
There's nothing I can't find a way around if I put my heart to it and so, I give to you, my raw, gluten free and vegan version of chocolate chip cookie dough! Yes, it's delicious and even more yes, you should try it whether you're vegan/gluten-free or not!
Enough anticipation already, you've got to start making these so you can be eating them in half an hour!
What you need:
Cookie Dough:
- coconut flour
- almond flour
- coconut oil
- coconut nectar (or sweetener of choice)
- coconut sugar (I tried to omit it to be extra, extra healthy, but, it made a huge difference with it in and, if I ever use sugar which is RARE, I always opt for organic, raw, coconut sugar)
- Himalayan sea salt
- chocolate chips/nibs (I made mine, I'll post that recipe another time when I take photos of the process <3)
Chocolate Icing:
- cacao powder
- coconut nectar
- coconut oil
- Himalayan sea salt
How to Make Them:
- Start off with a big bowl (I opt for stainless steel) and add in about 1 cup almond flour and 1 cup coconut flour.
- Add in coconut oil in small amounts until you have a mushy, doughy, consistency (coconut flour is tricky so just go by feel not by perfect measure!)
- Stir in chocolate chiunks
- Place in containers or line a baking tray with coconut oil and press into firmly
- Stir all icing ingredients together in a big bowl (start with about 1/2 cup cacao and add in sweetener to taste, and oil until you get a thickness that is consistent with your typical icing!) I didn't make much because this was a small batch and I am not making the top layer very thick but feel free to make more if you love a chocolate rush on top :)
- Spread icing on top of your base layer
- Put in freezer for 20 mins to harden
- Enjoy!
I have to tell you guys, I was racing through this recipe, I could not wait to get into them! I ate most of my batter before I was anywhere near the chocolate layer stage which is why you only see a couple of containers filled haha ;)

Usually, I make things that take far too much time (I am sure you know the feeling haha) but these are too easy to be true! I just don't know how to make the batter stick around. In the end more than half of it was already in my tummy :P XO

Can't wait to try these tomorrow. I have a kid with multiple allergies & gut issues and it's so hard to find recipes that are gluten free, dairy-free, egg-free, nut-free that also don't include sunflower seeds, cherry or carrot (those are used for natural color often). Anyway, thanks for posting this. Yum!
Oh wow, well I can tell you that I never use eggs, dairy or gluten in anything and rarely use any of those ingredients you listed out specifically in my desserts... sometimes sunflower seeds as a cheese sub but not in treats so, I am happy to share and continue to share recipes! I have some really good ones from before I took off on my trip, if you scroll down a little on my profile you'll see a lot of them... unfortunately in your case, I do often use nuts so that part won't help but I hope I can continue to help by sharing healthy recipes! I think it's really important that we find alternatives to the crap that's out there on shelves!

Oh that's perfect! I try to use almonds wherever possible, the only problem is that where I live, in Bali, almonds are really expensive so I have to bring them in with me whenever I visit other places or, I have fallen accustomed to using peanut butter and coconut butter because it's easy for me to get but, that being said, peanuts can always be subbed for almonds so that's an easy switch if you ever need in any of my recipes :)

It's really easy! Kids will love it! The trick is finding the balance between the very interesting texture of coconut flour and the coconut oil but you'll get it, just go for consistency! I'm excited to hear how it goes =D

@heart-to-heart COCONUT IS MY ABSOLUTELY FAVORITE THING! And yes, I feel you. As I love to cook and I love to eat I feel your struggle. Photos is the last thing someone thinks of when their mouth touch these kind of sweets. It is dangerous. Your recipe is dangerous! Keep it up and you just got yourself a new follower!
Oh I completely agree! I don't think I could survive without coconut :) I'm lucky to live where coconut products are easy for me to get, makes eating so much more delicious :) I try to share lots of recipes but I am traveling right now so it's a bit hard. I have LOTS of desserts (they are my favourite) so if you keep an eye out there will be much more coconut cooking coming around <3
