Hello Steemians,welcome to my first healthy breakfast tutorial

Today we'll be making a egg and potato skillet,this meal is good for Breakfast,Brunch,Lunch,Dinner and Desert? hehe

What you'll need.

  • Skillet
  • 3x Potatoes
  • spinach
  • mushrooms
  • 3 eggs
  • Green Bell Pepper
  • Onions
  • Salt & Pepper
  • Herb & Garlic seasoning
  • Paprika
  • Salsa
  • Garlic
  • Olive Oil
  • Spring Onion
  • Pot of boiling water

Stage 1.

We are going to take our Large pot of water to boil,adding a pinch of sea salt and toss in our chopped and washed potatoes and allow to simmer on medium heat for about 20 minutes.Make sure they are fork tender,but not overly cooked as we will be frying them later.

Stage 2.
In your large skillet your going to heat up some olive oil on medium heat.

Stage 3.
Saute our onions for a few minutes

Stage 4.
Dump in your cooked potatoes/green pepper/mushrooms/chopped garlic/seasoning.Bring the heat down to low and keep stirring until your potatoes become nice a crispy and your peppers get slightly cooked.You can also drizzle some olive oil but this is optional.

Stage 5.
Toss on your fresh spinach and fold them in so that steam will help wilt and cook the spinach.
At this point,flatten everything down with your spatula or spoon and make little divots in the dish so that your eggs can sit in.Depending on the amount of eggs you're making.

Stage 6.
Crack your eggs into the little holes that you made.Season with a little sea salt & pepper.

Stage 7.
Spoon on your salsa sauce!

Stage 8.
Top it with a lid and let it cook for about 3-5 minutes until the eggs are nice a cooked but the yolks are still runny.Sprinkle with a little spring onion and dust on some paprika for added color .

Finally!
Now we're at the best part,you can plate your dish.This is the perfect meal to have for breakfast,brunch or really if you just want a really quick and easy dinner option,this is great.I love dipping my potatoes right into the yolk,it's delicious.Who needs toast when you can dip your potatoes right in the eggs yolk?There you have it ,my egg and potato breakfast skillet.
