Perfect vegan stew for cold winter days
My new creation for you: The spice combination of garlic, ground black pepper, bay leafes and allspice warms you from the inside and is perfect to enjoy on cold winter days. I enjoyed this creation of mine very much.
INGREDIENTS:
- 400 g carrots
- 1 kg potatoes
- 2 medium sized onions
- 2 gloves of garlic
- 400 g chopped canned tomatoes
- 1 table spoon (or 1 tea spoon, in case you don't like your food spicy) of freshly ground black pepper
- 4-5 bay leafes
- 15-20 pieces of allspice (pimenta)
- 3 table spoons of olive oil (I have used organic, cold pressed olive oil)
- 1 l water
- fresh herbs for garnish
INSTRUCTIONS:
Roast chopped onions in olive oil for about 2-3 minutes until the onions get some color.
Add finely chopped garlic. Roast for about 1 munute more.
Add roughly chopped carrots and roast for another 2-3 minutes.
Add chopped tomatoes and spices. Roast for about 2 minutes.
Add water and potatoes.
Let the water boil, put it on slow heat, cover your pot and let the stew simmer for 1,5 hour.
Garnish with freshly cut herbs (I used dill and chives) and serve.
