@get-baking: Peach Crumble: Patelincho's Challenge (Country Dish - England)!

This week's Culinary Challenge from Patelincho is to represent your Country's National Dish.  This would be great apart from: England is known primarily for Roast Beef with Yorkshire Puddings.  Problem is, I am living in Spain, and although the food here is fantastic, they are not really well known for beef.  Trying to get a chunk of Sirloin, or several ribs in a joint is 'nigh on' impossible - there is no point in roasting anything else! 

So what to do?  Then I thought about puddings, why not?  Fruit crumble is the 'Nations favourite Dessert', and although not internationally known as an English National Dish, it is in England.  I therefore give you........

Peach Crumble

Ingredients Required:

6 Peaches (If the stone is loose from the peach then take it out and slice equally.  Unfortunately, my peaches had stones which would not come loose; not an issue, just cut the slices straight off the stone.  They will not be equal sized pieces but they are in a crumble, so hidden from view)!

2 tablespoons of Jam (I have just made peach jam, so that is what I used.  As it is for the sauce, try and use a jam not strong flavoured as you do not want it to mask the lovely peaches; use apricot or apple jam).

200g of dry ingredients, any combination you  feel like (I used 50g of plain flour, oats, coconut, and peanuts.  These were open in my store cupboard and go well together).

100g Butter (plus extra for sautéing the peaches)

50g Sugar (plus extra for topping the crumble).

Method:

Cut the peaches into thick slices.

Put into a pan with some butter, and sauté them until softened.

Add the jam to the peaches with 2 tablespoons of water; cook until the peach slices are glazed.

Share the peaches and syrup between four oven proof dishes.

Weigh out the dry ingredients of your choice.

Add the sugar,

and stir well to thoroughly mix the ingredients.

Weigh out the butter,

and melt.  (I microwave for one minute).

Pour the melted butter over the dry ingredients,

and stir very well so that everything is covered with the butter.  The mixture will clump a little which is what you want. (Normally you would rub in the fat, but doing it this way gives a much improved crumble which stays together better when baking; and it is much easier to do)!

Share the 'crumble' over the four dishes.  Do not pack down, leave it as you spooned it on.

Sprinkle a little more sugar on top of the crumb.

Into a medium hot oven, and bake for 30 minutes until the crumb is golden brown.

Serve hot with custard, or pouring cream; or cold with yogurt, or whipped cream...it is entirely up to you.

You can make crumble with any fruit you like so, experiment; a lovely pudding to complete your meal.
