Your Greenery Pasta are here

One of my favorite colors is green (after yellow and red), but this color I prefer for my meals, rather than wearing it.
You know what they say "You are what you eat", and green is the color of genius...Yeah, yeah, I'm a little genius in the kitchen!
This recipe is inspired by Ottolenghi and it is full of flavors, spicy and has a delicate sweetness, because of the fresh peas and why not fashionable (greenery is the color of the year).
You will need only 25 minutes to cook it. The original recipe was with Conchiglie, feta cheese and pine nuts, but being a foodie genius, I like to change some ingredients. So, instead I used spinach pasta, Romanian cow cheese and parmigiani, apricots and pumpkin seeds.
Ingredients
- pasta
- Greek yogurt
- fresh peas
- chilli flakes
- fresh mint
- parmigiani
- feta cheese
- apricots and pumpkin seeds
- Boil the pasta and peas for about 7-8 minutes.
- In a frying pan with olive oil, add the seeds and chilli flakes and fry for 5 minutes.
- In a large bowl, add the pasta and peas drained, yogurt, salt and pepper, cheese and mix.
- Sprinkle with fresh mint and seeds.
Serve with a chilled white wine. Amazing combination for this hot summer!
