Sweet Potato / Ube Dinner Rolls
Ingredients:
▪ One .25 oz pkg active dry yeast
▪ 3 tablespoon brown sugar
▪ 1 tablespoon white sugar
▪ 1/2 cup mashed potatoes
▪ 1 tablespoon Ube flavor or Vanilla
▪ 1/2 cup warm water 110 degrees
▪ 3 tablespoon butter softened
▪ 1 teaspoon salt
▪ 2 eggs
▪ 3 1/2 cup all purpose flour
Instructions
▪ Dissolve yeast, warm water and 1 tablespoon white sugar in your stand mixer bowl. Let it stand for 5 minutes or until yeast is bubbly.
▪ Add brown sugar, sweet potatoes, salt, eggs, and Ube flavor. Beat with mixer on low till ingredients are well mixed.
▪ Add 3 cups flour to the bowl, mix until flour is just incorporated. If dough is tacky add the rest of the flour to achieve soft, elastic dough. Knead for about 8 minutes. Do not over knead.
▪ Place your dough in a large bowl coated with oil. Turn dough in the bowl so all sides are coated with oil. Cover and place in a warm, draft free area to rise. Let it rise until double in size for about 1 hour.
▪ Punch dough. Transfer in lightly floured work area. Let it rest for 2 minutes. Divide dough into 16 equal parts or I recommend using kitchen scale.
▪ Place in a grease baking pan. Cover and place in a warm, draft free area to rise 2nd time. Let it rise until double in size, about 1 hour.
▪ Brush top with eqq wash (optional egg with 1 tablespoon water)
▪ Bake at 375 degrees for about 20 minutes or until roll tops are golden brown. Remove from the oven and let it cool.
