Taatjespap - old Flemish recipe
Taatjespap or if you translate to English it would be something like porridge of potatoes.
It's an old recipe that people used apparently during the second worldwar.
People didn't have much food and this was something they could eat and give them their energy.
Ingredients for about 3-4 people:
3 l (101.4 oz) buttermilk
1.5-2 kg (5.5-6.6 lb) potatoes
Sorel (2-3 teaspoons)
200g (0.4 lb) butter
Pepper, salt, nutmeg
6 eggs
Preparation
You start with boiling buttermilk with a little flour.
You have to keep stirring it until boiling, when the buttermilk starts rising up. You turn off the heat.
You also prepare potatoes. For 3l (101.4 oz) of buttermilk you need about 1.5-2 kg (5.5-6.6 lb) of potatoes.
You boil the potatoes until they're soft for mashing them.
When the potatoes are ready you mash them or use a food mill to add them to the boiled buttermilk. You start the heating again on slow heating.
In the mean time you put butter in a pan and put it on the heating to melt it until light brownish.
In the buttermilk you add a couple of tea spoons of sorel.
You use a mixer to mix everything together.
You add salt, pepper and nutmeg, according to taste. For 3 l it requires quite some salt.
Once the butter is a little brown, you add it to the porridge and mix all together until nice blended mixture.
In the pan of butter you bake some scrambled eggs.
You add the eggs in a cup and pour the porridge over it and mix with a spoon and start eating.
Instead of eggs or as second portion, you can also use cheese to put in the porridge. Best is a Gouda type of cheese.

Im flemish and never ate it. What a shame. Should make it myself next week
Well it's mixed feelings. Some people are considering it as poor people food. And it's most from West Flanders I think
