A Witch in the Kitchen: "Chicken with Vegetables, Chop Suey Style"

Hello Dear Witches...!

As some people already know I am a lover of Chinese food, however some of these delicious dishes have a high content of sauces, condiments and salt, so every now and then I make my own versions and eliminate some of these elements, replacing them with healthier ones, and in the end I get a result very similar to the originals, or to the ones we usually get in a Chinese restaurant.



The chop suey is one of my favorites, after a good fried rice, and I can not forget the delicious spring rolls, this is one of my delusions, in fact I usually prepare them and add this recipe as a filling. This chicken with vegetables was my dinner last night, accompanied by a simple white rice, because the truth is that it did not merit anything else that could overshadow its delicious flavor.



The good thing about these recipes is that they are very easy and fast, and we can always make them healthy, which is the best, come with me and I show you how easy it was to prepare this one. Enjoy! .


Ingredients


  • 400 g boned and cubed chicken.
  • 3 Lemon Juice.
  • 300 gr of cabbage chopped in strips.
  • 1 Cup chopped pepper in strips.
  • 1/2 Cup celery chopped in strips.
  • 1 Medium carrot, finely chopped
  • 1 Large onion, chopped in julienne
  • 200 g chopped broccoli.
  • 1 Tbsp soybean oil
  • 1/2 tsp anchovy oil
  • 1/2 tsp minced garlic
  • 1 Tbsp of salt.
  • 1/2 tsp ground cumin
  • 1 Tbsp cane honey.

    • Difficulty Level: Low
    • Preparation time: 15 Minutes
    • Baking time: 15 Minutes
    • Yield: 6 Portions.


    • To begin we season our chicken, for which we will use the salt, cumin, anchovy oil (this is optional), and the juice of a lemon, we reserve while we heat the pot where the chop suey is going to be prepared, we add the oil and we sauté the chicken until golden a little, we continue adding the onion and we stir until they crystallize, to continue adding the chili and celery.



      Stir and continue adding the carrot and broccoli, integrate and let cook for a couple of minutes and covered, after this time add the spoonful of sugarcane honey, and mix to add the cabbage and remaining lemon juice, stir again very well to integrate everything, if you want to retouch salt and cumin at this time, continue cooking over low heat for about 5 minutes more, then cover and turn off the fire.



      List this delight, we only have to accompany it with a good white rice, or if you want with a fried rice, what if I can assure you is that you will not notice the lack of soy sauce anywhere, I tell you to add a jalapeño between the peppers, is that if it does not have spicy for me always lack something hahaha.

      Looks pretty good! I got Asian heritage... but for some reason, I've never eaten or cooked Chop Suey (that I know of...) ! I'm still a little bit confused as to what it actually is!
