I created this dish for Diabetes Awareness Week! Most of my weeknight meals are designed to be healthy and nutritious however, to support and observe this special week, I created this dinner which was delicious, healthy and diabetic friendly.
I am not a nutritionist but I have been fortunate enough to have three close family members trained in the health field. Also, I have the most toughest, demanding, unpaid job of being a mother, wife and a home chef, designing and planning meals for the three health professional for decades. Grains, legumes and vegetables with low glycemic index release the sugar slowly into the bloodstream therefore, It is really important to choose the right type of carbohydrates with low glycemic index in our meals rather than avoiding it completely.
This recipe combines the deep gamey flavour of venison, crunchy asparagus, garlic roasted sweet potatoes and jus. Venison is pan seared, then smeared with a bit of truffle butter and finished off in the oven. It was so tender and pink! The delicious sauce is made from the truffle infused pan juices and reduced with some wine. Deliciously satisfying meal that we thoroughly enjoyed.
